Meet Chef Polo
With more than 30 years of culinary experience, Chef Polo has built a reputation throughout Western North Carolina for exceptional cuisine, creative presentation, and memorable dining experiences.
Prior to 2020, he served as Executive Chef for several respected area restaurants, where he became known for refined menus and elevated hospitality. In recent years, Chef Polo has focused his passion on private dining and curated culinary events through his venture, The Pinnacle of Fairview.
His approach combines fine dining technique with approachable warmth, creating experiences that feel both elevated and personal.
At Chef Polo’s Table, guests are not simply attending dinner, they are part of a carefully curated culinary experience designed to be savored course by course.
